Below is one we recently received about GMOs. The use of GMO (Genetically Modified) foods is a real concern in the US and around the world. These genetically modified produce is not labeled in the United States and there is a growing concern of the side-effects of consuming these altered foods. We thought we would pass this one along to you to keep you informed of the issue. We are dedicated to making sure we only stock NON-GMO food as much as we possibly can here at Food for Thought.</p>
<p><em>October 2012 marks the third annual Non-GMO Month, and the celebration could not be more timely. Recent polls show that more than 90% of Americans want to know whether or not their food contains GMOs, and 2012 has seen a groundswell in the “right to know” movement. In the past year, over 1.2 million Americans have contacted the FDA asking them to implement mandatory labeling of GMO foods, and more than a dozen states have taken up GMO labeling bills, including a voter initiative in California that puts mandatory GMO labeling on this November’s ballot.</em></p>
<p><em>While consumers fight for their right to know at the polls, the Non-GMO Project is providing shoppers with an immediate solution to the presence of unlabeled GMOs.  As the only third party non-GMO verification in North America, the Non-GMO Project Verified seal is quickly gaining popularity. <p><strong>Experience pain relief for yourself with Curcumin.</strong><br />
So what is Curcumin and how does it work? If you have tasted curry you will be familiar with Curcumin. Curry is a combination of Turmeric and usually Red Pepper. Curcumin is the active ingredient of Turmeric. It is part of the Turmeric root that gives Curry its golden color. It is botanically known as<em> Curcuma longa</em>. It is a member of the antioxidant-rich ginger family.</p>
<p><strong>Oxidation, Inflammation and Chronic Pain</strong><br />
In order to understand how Curcumin works you need to understand oxidation. Oxidation in the body is exactly like metal rusting and food getting brown when left out. It is a process of the cells chemically breaking down and has to do with the loss of at least one electron when two or more substances interact. That roaming electron is called a free radical. It is highly unstable and attempts to stabilize by stealing electrons from healthy cells, proteins and DNA, thereby damaging them and causing inflammation and pain.  A strong argument can be made that oxidation is a main cause of disease.</p>
<p><strong>Pain Relief and Antioxidants</strong><br />
So what is the solution? Oxidation is a natural process of respiration and, fortunately for us, nature has provided a solution in the form of antioxidants.  An antioxidant is a substance that is highly stable and has extra electrons to give away thereby stabilizing free radicals and stopping the oxidation process. Curcumin has an amazing 157,000 ORAC rating (Oxygen Radical Absorbance Capacity), that is 26 times more than a serving of blueberries, which itself has a high ORAC rating. Curcumin scrubs the “rust” from your cells.</p>
<p>Curcumin has long history as a medicinal herb without any known side effects. It been used in both Ayurvedic and Chinese medicine for thousands of years. It has recently received attention in Western Medicine for its anit-inflammatory and anit-tumoral  properties. There is a plethora of studies done on the benefits of Turmeric for inflammation, pain relief and tumor inhibitors. Curcumin, being Turmeric’s active ingredient, has a more concentrated and therefore a much more powerful effect than Turmeric. Curcumin has proven antioxidant, anti-inflammatory and anti-cancer properties.</p>
<p><strong>Reduce Inflammation and Reduce Pain</strong><br />
Most pain is caused and compounded by inflammation. Curcumin is proven to dramatically reduce inflammation. It also can actually help repair and rebuild worn cartilage, restoring joints flexibility. <p style="text-align: center;">     <strong>Hearty Vegetable Lasagna: Organic  and  Gluten Free</strong></p>

<p>INGREDIENTS:</p>
<p>1 Package of Tinkyada Brown Rice Pasta Lasagna &#8211; Wheat Free/Gluten Free</p>
<p>1 Pound of fresh mushrooms, sliced</p>
<p>1 cup of broccoli, spinach (or any other vegetable you choose)</p>
<p>3/4 cup of chopped red pepper</p>
<p>3/4 chopped red onion</p>
<p>3 cloves garlic, minced</p>
<p>2 tablespoons Bioitalia 100% Organic Olive Oil</p>
<p>2 jars Eden Organic Pasta Sauce</p>
<p>1 teaspoon Italian Seasoning</p>
<p>5 cups of Daiya Mozzarella Cheese (dairy free)</p>
<p>2 Organic eggs (or for vegan try: enerG egg replacer)</p>
<p>DIRECTIONS:</p>
<p>1. Cook the lasagna noodles in a large pot of boiling water for 10 minutes. Rinse with cold water and drain.</p>
<p>2. In a large saucepan, cook and stir mushrooms, peppers, onion and garlic in oil.  Stir in pasta sauce and italian seasoning; bring to a boil. Reduce heat and simmer 15 minutes. </p>
<p>3. Mix together two cups of cheese and eggs.</p>
<p>4. Preheat oven to 350 degrees F. Spread 1 cup of tomato sauce into the bottom of a greased baking dish. Layer 1/2 each, lasagna noodles, cheese mix and sauce.</p>
<p>5. Repeat layering and top with remaining cheese.</p>
<p>6. Bake, uncovered, for 40 minutes. Let stand 15 minutes before serving.</p>
